A Taste of Tradition
From South America to South LONDON

Growing up in South London with an Argentinian father and a Chilean mother, I was surrounded by the rich flavours of South American cuisine. My journey into food started at my parents' restaurant, El Gaucho— London’s first Argentinian eatery, which opened at Chelsea Farmer's Market in 1990. Some of my best memories come from those early days, where I discovered a love for great food and my cultural roots.
Although El Gaucho has since closed, its spirit lives on in Paisanita. Named after the paisana—the female version of the Argentinian cowboy, the gaucho—Paisanita reflects the warmth and passion of my upbringing. The addition of "ita" makes it a mini version, a nod to sharing the memories of my childhood and South American culture with others. More than just a sauce, Paisanita is a tribute to tradition and a way to bring the authentic flavours of South America to the table.
